The title say's it, my personal choice on all of my computers is GCC/GNU the reason is it Open source and widely available, post yours!

I use GCC/GNU because it works.

Otherwise, for Java, I usually use the Sun supplied one. And for C# I use Mono/Visual Studio depending which platform I'm on.
