Try searching for content on mmorpg creation to start with and then you can implement some of the concepts in the Java language. Very rarely do you find something about game design strictly done in a particular language, usually they teach the concepts of game design and then they leave it up to the programmer to implement the concepts in their language of choice. You can even go to the local bookstore (like chapters or barnes and noble) and pick up books that teach you the math and theory of game design and implement the concepts in Java. Hope the advice helps you find the info you are after.
