Well you need to get hold of the Iphone SDK for Xcode, I think you have to pay to register as a developer to get this.

From there you will have options to create all kinds of applications for the Iphone and with a nice emulator to test them on, you can wrap all sorts of things into an Iphone app such as OpenGL.
