What JJSaw said however I would like to add:
God Of War - (Never played it, but many games were modeled off of it.)
Metal Gear Solid.
L4D of course....

Actually, decade is too restricting. Lets do most influencial ever. Mine would have to be:
Metal Gear Solid - First game to really have distructable environment. Plus Snake is just too bad ass to put in words. I mean, come on! Who else can destroy nukes while hiding in a cardboard box while getting electricuted and stripped by their gay brother? XD
Silent Hill - Really set the bar a far as the horror genre goes.
Resident Evil - Started the zombie trend. <3
Top 3 for now. Give more later.

mgs on psOne is prob still my fav game of all time. the rest were good but i prob would have enjoyed MGS1 onthe ps3 with MGS4 graphics alot more. u just cant beat that opening sequence of swimming up to that basement area and having to sneak to the elevator. waaaaaaay ahead of its time.

Absolutely. I remember when Pizza Hut gave out ps1 demos and Tomb Raider II and MGS1 were on the same disc. I think I played it so much it got ruined lol.

of all time?
hmm.
Half Life. showed what a shooter could be.
Thief: the Dark Project. Showed what first person could be, what steampunk would become, and set the bar for cool storytelling, especially for a fantasy game.
Splinter Cell. showed what stealth, gadgets, a bit of scifi and a bit of paranoia could do.
Grand Theft Auto (any of them). set (and continues to set) the bar in open ended gameplay.
Postal 2. I'll catch flak for this, but postal 2 is one of the best games ever made: It's open ended, hilarious, perverse, and deeply satirical of the American psyche. Plus being able to pee anywhere or stick a shotgun up a cat's ass for an impromptu silencer is awesome.
Ngame. running and jumping in a physics puzzle was never so fun.
