Hello, I would like to know what programmers do at events like
techcrunch Hackathon, and other hacking events what do they hack?,
is it related to security or I dont know, someone please explain

They create little apps for mobile devices and computers. Usually someone creates a 'hardware' hack, where they make something cool (this year someone designed a chair to encourage fidgeting)
They don't "hack" into websites or anything like that. The term 'hack' has many different meanings depending on who you ask.
Did you watch the livestream at all? If not, go check out some of the videos when they put them up.

There are different events for hacking... most are where groups of a few people team up and create small programs or games. Others are more showcases of what they have done during the year.
