Is that a fair assumption as things currently stand? I plan to be doing a lot of development that uses back end databases (entity framework) and data analysis, so I am assuming Desktop WPF/XAML development makes sense?

What exactly is your assumption?
If you are referring to the Metro in Windows 8, I doubt Ipad supports that very well. Also you can't develop Metro applications with WPF. And if you want to create a metro style application using WinRT, you can't connect directly to database, you have to use web service or something similar.
But WPF is good for applications which use .NET framework. But Silverlight software can be easily ported to Metro style since SL already forces the use of web services for getting data.

I don't mean the Ipad will be running windows 8
, I meant that the new Metro style is aimed at that market, e.g. touch screens, mobile and tablets. And that business + database applications will still be developed on the traditional Desktop: e.g. WPF/SL/ASP etc
