Hi guys,
I recently stumbled upon an opportunity that sparked my interest in microchip programming but I don't know where to start. I have small experience with assembly languages and C in general because I started programming in Java. But I'm really interested in branching out and trying new stuff. So what is the easiest way to start microchip programming that will give me the most understanding of the what I am doing?

What exactly do you want to do with a microchip?

The basics I guess, perform a few calculations and interact with the hardware.

Ah.. well that's not really helpful. See there a ton of various chips, boards, and hardware. Everything from odd assembly chips to more functional chips on boards for arduino, fez II pandas, and so forth. It all depends on how far down you care to get and what you want to build.
For example - I've been futzing around with various boards and tech on my 'share your project'.

Google the teensy micro-controller. Its a USB development board and you can program it in C I think

Thanks a lot guys, you were really helpful. I especially like the Arduino forum, it seems to be what a beginner like me needs.
