You should be able to figure it out what pages to look for if you've got the java experience necessary to assemble a J2EE application, you also failed to mention what kind of J2EE application you want to make, one that's a simple servlet/jsp thing or something more complete that will require use of a full application server?

We have plenty of examples and tutorials online for JavaEE, try to google something and you can get them:
What I used when starting EE was:Oracle - Java EE Tutorials
And also you can look at Introduction to JavaEE

I have some experience (2years) : creating descktop applications and actually i wanna move to J2EE applications.

i wanna create intranet application who help users in our comapny to establish statistics with an easy way, tables, graphics, facilitate interaction with an oracle database.

i wanna work with open source tools, what server should i use ? technologies (data persistence, IHM, ...)?

As far as I know JBoss is the only alternative that supports the same stuff exactly without addons.
