try looking for "how to edit headers in microsoft word 2007"
ie:
tutorial on how to edit headers in ms word 2007
You might have to strip out all of the converted garbage from the pdf. If the stuff that you want to remove is repetitive then you could try using "find and replace" tools.
hope that helps

I haven't used word or office in years, but when you save as an "office" doc, all the MS formatting stays intact. Couldn't you just save/export the file as a Non-MS office doc like RTF which will remove the headers?
