Text particles, what are they/how to use them?

I was watching some videos of games deved in Java and from many google searches I cant seem to find it, maybe they arent called particles or text particle or whatever(:
What I'm talking about is This video. If you skip to 2:00, (its through out the whole video) when the player is hit/hits a zombie, the text bounces like that, anyone know how one can do that?

I made a tutorial a while ago for something very similar

It is written in AS3 but the concepts are easily transferable. Hope that helps :)
