I wouldn't go strictly medieval. Medieval and renaissance is already beaten to death. Faires, Medieval Times, tons of pseudo historical or fantasy stuff, already well established.
No, you want to go where mead is king. Where it's the drink of choice enjoyed by the gods. You want Vikings! You have a Medieval theme, people will want a range of booze. But in the halls of Valhalla, it's mead or suck it. You get to push mead and explain it.
A Viking theme, now, that would be something. Mead in horns as Odin intended. Roast boar. And, oh yeah, boobies. Norse women demanded easy access to whip em out to feed the kids. Or, entertain the troops. Throw in some Beowulf, imply an imminent Grendel, and you have theme restaurant drama that doesn't tread a well worn path.
People currently love pseudo Viking stuff, while pseudo Arthurian is a little played out. From credit card commercials to "How to Train Your Dragon" to Thor. Good luck.

I was thinking more along the lines of placating earth rim roamers by charging glasses on frequent occasions. But, hey, if the odd amputation arm wrestle is more of a crowd pleaser...
I also feel the need to add that I haven't found Hooters' food to suck. Granted, they have a deep fryer and aren't afraid to use it, but they use it well. It is one of the very few places in Jersey were you can get grouper and a decent key lime pie.

There are no fucking horned helmets! Though, for a theme place, I guess you could go Wagner.
The reality is fairly utilitarian. Simple metal helms with nasals are common. ( See Bayeux tapestry. ) The nasal is sometimes built upon with more metal for cheek and face protection. Various ear plates have also been found. Mail drapes fill in the rest, along with leather which doesn't hold up so well in graves.
There has never been evidence of horns. It is, like so much middle age errata, a myth propagated by the Victorians.
