Choose a real life domain, something you are familiar with. Identify potential problems that software can solve regarding this domain.
Choose the technologies you can use to solve these problems and that you are proficient in.
Take a piece of paper and do some brainstorming. Make a plan : what are you trying to achieve, how will you achieve it, what you already know and what you must find out.
Start with what you already can do and add the parts as you learn.

Short (rather abused) example:
Suppose you decide you are familiar with HoReCa. Make an inventory system. You'll need:

1. SQL Server / MySQL database modelling the activity of a restaurant
2. Windows Forms / WPF desktop app as the user interface to the database, allowing all sorts of operations
3. Entity Framework and LINQ for easy data access (creating,reading,updating and deleting data)
3. Crystal Reports for generating reports regarding the operations that take place on the database via the interface

Split the problem into several easier problems, each easier problem into several easier problems until you have easy enough problems to solve.
