How exactly does one go about this? What do employers expect to see?

I think you are on the right track. Having it online allows future employers to have a glance at your work. They might then ask you couple questions on a particular project - what problems you had, how you solved them. They want to see how you arrive at the solution. Of course, this kind of stuff varies from employer to employer. One thing i would say, data structures are very important and common questions at interviews and because you implmented them yourself, you should be able to deal with this area of questions.

On the right track. I would put all your Project Euler stuff in one repository and have folders for different languages but that is just me.

Keep cranking away making more programs and if you open source them, keep them on Github.
