Depends on what you're trying to do, I suppose. I've never really found a good use for 3D arrays, though.

A lot of animations deal with matrix calculations. Sometimes it's necessary to do the calculations yourself. Other times, existing tools like AffineTransform can handle them. I don't really think 3D arrays are ever necessary; at least, I've never found a good use for them. I've always been able to use OOP in an appropriate way to avoid multidimensional arrays.

Your question is very broad. It's like asking if cheese is used in an Italian recipe. The answer is that it depends on what you're cooking.

Let's turn the question around. What is it that makes you think they might be useful for these applications? How do you think you might use them?

Having established those answers, what would be some alternatives you might consider, and what would be the trade-offs? If you suspect there are performance-related issues, how would you test them to establish the facts of the matter? I mean, mac's hella smart and all but to you he's just some guy on the internet. How are you going to convince yourself that the solution you choose is actually the correct one?
It seems to me the first question is, what exactly is it you're trying to do?
