I built a series of basic, but filling, burritos tonight. In retrospect I should have prepared better and adventured into making my own barbacoa. Next time.. next time.

I've always enjoyed making them, but I've never completed one. Any time I get started the project just doesn't take off. I get through the first phase of construction and then lose interest in seeing the project through to completion.

Don't get me wrong, they are insanely fun to make, but the maintenance cost and upkeep hours required after completion is enough to drive you to drink.

I generally prefer being driven to drink over walking there. But it's more fun on a bike, any day.

What have I made? I have made many gallons of beer. Most of them good.

You can make your own beer, is that legal? I know that prohibition is over but i wanted to ask.

Oh - is there a specific DIC blend? Maybe something a little less harsh than the silly 8bit pale ale out there?

As far as I know it's legal in all states. There are some restrictions - for example, if you want to sell it you have to abide by the usual laws about producing and selling alcohol, and there's usually some cap on what's allowed to brew for personal consumption, but basically, brewing for yourself and your friends is quite legit.
