Hi,
I could do with some tips as I am finding it hard to learn, I seem to be jumping in and out of different ideas and languages.
Has anyone got any good ideas on some simple projects I could start on using PHP?
Thanks,

I would build a CMS system, and break it into small projects (e.g. Login, Security, Add Page to database, Edit Page, Delete Page etc...)
That way you will be taking on small challenges which you can put together in the end to form a complete project solution. Means your work won't be wasted
Or, if you're getting bored try hackthissite.org - it'll be fun and you'll be forced to research various aspects of security which will prove invaluable for your future programming

Depending on how far you are with the language you could set up a simple blog system, or calendar that can hold events. Either of those are pretty interesting things to try out for the first time.

Those are all good projects, but not quite sure if they're good for beginning, as there are a lot of considerations to be taken.
