I like aged Gouda. Smoked Gouda is good too, but nothing beats some 5 year old Gouda
It's really good with coffee.
Though the crazy side of me would like to try some Casu Marzu. Nothing like some illegal cheese, rofl!

It quite depends on mood.
Fresh mozzarella ( lots of places make it local in Jersey ), with just a little sea salt and good olive oil. Other fresh cheeses are cheese curds ( Canadians smother these in french fries and gravy), panir, queso para freir ( basically less melty queso blanco; fried ).
Camembert: Forget brie, this the similar but tends to have less rind, more oozy goodness, and can be strong but usually not too stinky. Not that stinky is bad. If you don't like runny cheese, think of it as butter with a kick.
A nice gruyere for the perfect grilled ham and cheese.
I have enjoyed the illegal raw milk stuff. I don't care for blues. There are some with herbs in them that are good. Nettles, strangely, are excellent in many cheeses...never mind, it's cheese, it's all good.
Um, I do draw the line at maggots.
