Xubuntu is up and running! (Thanks for the suggestion thesilentenigma!)
Running from the LIVE CD (of either Xubuntu or Ubuntu) was beyond slow, as to be expected given the older hardware.
The install took less then thirty minutes, which surprised me. Partitioning an 80 GB hard drive only took ~10 minutes...on a Pentium III!?! Installing the damn drive took longer (tool-less case installs are the way to go!)
I spent the last hour navigating around my environment, adjusting as necessary. With great power comes with great responsibility...damn Spiderman cliche-ing my thoughts! *shakes fist*

For the older hardware, I would suggest fluxbox/blackbox. fb is based off bb, so they're almost identical. They're also very compact and run fairly smoothly on lesser hardware. However, most of the customization must be done by editing the text configuration files and then reloading them.
I don't know if you've already thought about fb/bb or even tried them, but if not, you should give them a try.

Also I would suggest GParted, PDFedit, SciTE, maybe Eclipse, Sunbird (calendar program), Comix, Freemind, Conky is good but might bog your system way down.

I like BlackBox because it's menu system is extremely manageable.
