Here's an interesting blog entry (well, 4 actually) detailing writing a Pac-Man game in JavaFX. I might try this myself if I get time.

Haha... that's interesting because I found the same blog entry and book marked both Part 1 and Part 2. I figured, if nothing else, it would show off a lot of the possibilities as well as helping with the learning curve.
