I just got Linux Mint and I've been searching for a way to get my iPod Touch to sync with my Linux but I can't find a way.

I don't know what Desktop Environment Mint has, but since its Ubuntu based, you could use several programs.
KDE: Amarok
GNOME: Exaile
Also, if you don't like those, Banshee should work.

If it's new enough, you can't. Apple has made the decision that only iTunes should be used to manage music on their devices. To this end, they go out of their way to make it difficult otherwise.
Earlier iPods behaved like any other USB storage device and you could update them with third party products pretty easily. Newer ones, not so much. Even if you can get to the protected file system, you still have to crack the iTunes DB.
Many of the Linux iPod GUI programs use libgpod. You may find more info there.

I downloaded it but I'm having trouble installing it. I'm reading the Install file thingy but I don't know how to install it the way it says in the Install file in the folder. Could you tell me how to do it or give me a link to go somewhere that could tell me how.

gtkPod is for Gnome desktops. Are you using gnome? If you are not, then this is very likely as to why it isn't working.
Can you provide us with an error message, or a description of how it failed?

I'm not getting an error. It's just I don't know how to do it. I'm using Linux Mint 7.

I love you No2Pencil you saved from making a virtual machine and getting iTunes.
I have an iPod Touch and it's stuck at the power screen and it says I need to plug it into iTunes. Is their a way to get past that.

You must use iTunes to access an iTouch. As previously stated Apple has made database software that will only work with the iTunes. The iTouch (or iPod) is not a storage device, it's an MP3 player, so it isn't open source. It doesn't just work & you must use the associated software with it.
Sorry.
Sorry.
