Level 56, around 5 or 6 stats at 100. I currently have a grudge against Skyrim because the Ivory Dragon Claw isn't where it's supposed to be. (I had a hunch and went for it, then checked a guide when it wasn't there... turns out I was right about it's location, but the guy's body who should have it just has random loot)

God I play videogames to escape reality, and not to have the random bear encounters follow me in!

I'm assuming you've yet to climb the 'throat of the world' and met the graybeards yet... go do that.

Not a ton of bears. I actually run into more wolves than bears. I do think bears a little too powerful at times though. One fire ball and a bear in real life would be cooked since their hair would light up like a xmas tree.
But do keep in mind that bears love to sleep in roads and paths so if you go off trail a bit and run parallel to a road you may avoid bears more and perhaps the occasional bandit trying to collect some kind of toll.

Do companions ride with you on a horse, or do I need to fork over for their own pony?

This has been my biggest complaint so far. You can't get them a horse to ride on, and they don't ride with you. They just trail along behind you running along... meaning they fall back VERY far on long trips.
What me and my buddies do is just ride along and then occasionally just stop and select wait for an hour, and they usually appear beside (unless you've been running a very long time). Be careful though, I've sometimes had my companion straight up disapear from existence (I guess died) when running quickly through mountains and water. Usually a quick travel spawns them again, but sometimes they're gone forever. Such as the far north regions, we swam over to some island, and then upon leaving I swam/ran all the way to Winterhold, only to find that my companion no longer existed anywhere.
