Flowers, chocolate (don't skimp, best bet is middle-of-the-pack valentines chocolates), take her out for a nice meal (focus on the food, not the environment, she won't want the hassle of dressing up), just make her know you care in such a way as to not make her do anything (again, social engagements or anything where she dresses up are just out).
