There was a documentary made by Jason Scott about Interactive Fiction called Get Lamp.

I also remember watching parts of a documentary called once upon Atari. I'll bet you can't guess what it was about ;)

And the only documentaries I've seen on gaming are usually how they are bad for you and corrupt our youth and what not.

The only ones I know of aren't really related to development at all. There was Eathletes which is about professional CS players, King of Kong which is a tale of lies, deceit and Donkey Kong. All others seem to be about gaming addiction.

The 1 hour long Bungie documentary is probably the closest to what you're looking for. Here

I found the best documentary about being a game designer.
