What about privacy and aliaces if compare iCloud to Outlook?

Email services spying on us, so I suppose outlook is not an exception. But what about iCloud? They have such notion: Privacy is a fundamental human right. Do they mine data from emails too? Also I heard about email alias feature, which does it better: amount of aliases for example.

(I know about stuff like Lavabit and Protonmail, it's not about them)

For the most part, just deal with it.

If you want to get super fancy buy a domain name and most hosting have email accounts setup for said domain for you to use. Manage your own mail server and what not.

You could also then pay for an email service that claims to not do that and be prepared to sue them for breach if you have proof otherwise.

This is what I did. Also any free service comes with some cost. They're going to sell your data. You also relinquish any rights of what they may do going forward. They could accidentally delete your account, your account could be compromised because the use weak 2 form factor authentication, or even the company could up & close one day.
